Tasting notes
More earthy than fruity, Bloodstone opens with white pepper, cinnamon, clove, violets, truffle, and black cherry. The palate is subtle yet complex, with silky tannins and balanced acidity. Designed as a red wine for white-wine drinkers; it pairs beautifully with refined dishes such as filet mignon or mushroom-forward cuisine.
Winemaking notes. Fer Servadou was destemmed, crushed, and cold-soaked four days for optimal color and flavor extraction. Fermented in bins with twice-daily punchdowns for 14 days, then pressed to one-year-old 500L French oak puncheons. Sur lie aged with biweekly stirring for three months and matured ten months in barrel. Bottled unfiltered; 323 cases.
Vintage notes. The 2021 vintage benefited from a warmer-than-usual autumn, accelerating ripening while preserving acidity and producing generous yields. Fer Servadou thrived in the extended warmth, developing its hallmark aromatics and supple tannins.
