Tasting notes

Onyx 2020 delivers an intense nose of dark chocolate, black currant, tobacco, and vanilla. The palate is powerful and structured with firm tannins and a long, resonant finish. Pairs beautifully with ribeye, braised meats, and richly flavored dishes.

Winemaking notes. Tannat was destemmed, crushed, and cold-soaked four days before fermentation. Fermented in bins with gentle twice-daily punchdowns for 14 days, then pressed to new 500L French oak puncheons. Sur lie aged with periodic stirring for three months, then matured 18 months in barrel. Bottled unfiltered; 295 cases.

Vintage notes. The 2020 vintage brought low rainfall and warmer-than-average temperatures, yielding smaller clusters with exceptional concentration. Extended hang time and dry conditions delivered dense tannins, deep color, and powerful structure.
