Tasting notes
Floral notes and melon lead into a dry, crisp finish.
Winemaking notes. Whole fruit was pressed directly to stainless steel with no skin maceration, preserving the variety’s floral lift and pale color. Fermented in stainless steel with a commercial yeast strain, with malolactic fermentation fully blocked to retain natural acidity. No oak at any stage; sterile filtered with no fining. The second generation of Iron Will’s Sparkling Viognier, from the estate block.
Vintage notes. 2024 was a good growing season for this style of wine. The brix to acidity ratio was very good, giving fruit with ripe aromatics and the natural acidity a sparkling wine depends on.
