Tasting notes
Aromas of green apple, honeydew, honeysuckle, and unripe stone fruit. Crisp on the palate with balanced acidity and a slight honey and butterscotch finish.
Winemaking notes. Fermented in stainless steel with commercial yeast, then aged five months in French oak, 50% second fill and 50% neutral. Finished dry at 0 g/L residual sugar and filtered before bottling.
Vintage notes. A cold spring was followed by a cooler, wet mid-summer. The weather turned dry and warm in August and September, allowing late-season ripening and an abundant harvest.
